It has been quite a while since I have made a good, thick, and robust veggie burger. The black bean burgers in restaurants can never seem to compare to the standards of a homemade, home cooked vegan black bean burger. Plus, it gave me a reason to use those leftover mushrooms. That being said, I decided to give this one a try! I hope you have fun this Sunday!
THE ORIGINAL RECIPE
See the original recipe here: I used a vegan egg replacement, but you could use a regular egg if you aren't going full vegan. I also threw in about a cup of baby portabella mushrooms to the mix.
MY REVIEW
I normally wouldn't toss in a green veggie to my burger recipe, but it was an easy way to add some extra veg to my burger. I feel like mushrooms in veggie burgers are always a plus, and I had some to get rid of anyway. This recipe was good, but I feel like it lacked the major flavor busters I'm usually craving in a burger recipe. It was generally pretty bland in taste, but a sturdy burger. I may be a little bias, but I still prefer my black bean burger recipe.
I hope you do something fun this Sunday!
