Vegan Cauliflower Pizza Crust

Living in the Austin, Texas area is a problem for anyone who loves food. There are new foods to try everywhere you go, and the weight can easily pile on (I've easily gained 10 lbs.since moving here!). So, it's no wonder I've been trying to find ways to slim down and cut back to keep from weighting 10,000 lbs...So, I have this vegan pizza crust a try and think you should too!


The Original Recipe:


Follow the recipe as listed, thanks to incredibly talented Minimalist Baker. I didn't have any cornmeal as listed, so I used some of the nutritional yeast, and I used vegetarian toppings vs. vegan. For the flax egg, I used my favorite vegan egg replacement vs. a regular flax egg. .


Directions:


Follow the directions as listed in the recipe. I may have cooked it a little longer to get crispier crust.


My Review:


First, I need to say how delicious and pleasantly surprised I was for this pizza crust! It was thin, it held together well, and had great flavor. However, there are some definite downsides. The first, was that this recipe is only good for about a 10"-12" personal size pizza. If you are expecting to prep this for lunches during the week, you should probably make about 2-3 of these pizzas. And when I say tiny slices, I mean slices that look like they are made to be served at a kids tea party type of tiny.


Overall, this was a tasty, low-carb treat for that pizza craving. Give a try yourself and I hope you do something fun this Sunday!
