Vegan Sweet Potato and Black Bean Tacos

Exhausted from a busy weekend of IKEA and thrift shopping, I did not want to spend a ton of time in the kitchen. I looked and threw together this really simple recipe. Check it out today and I hope you did something fun this Sunday!

1/4 cup sweet potato (I got a huge one and grilled it)

1 tsp. olive oil (I used 2 tbsp.)

1 tsp. kosher salt

1/4 tsp. black pepper (I used about 1/2 tsp. on a whole sweet potato)

1 can black beans (drained and rinsed)

1/4 cup pico de gallo

1/4 cup diced avocado (I didn't use)

2 teaspoons fresh chopped cilantro

*I also added grilled red onions*


Directions:


Follow the instructions in the original recipe.

The only thing I did differently was grill the sweet potato, instead of microwave.


My Review:


This recipe was good, but dry. It could use a sauce or gauc. But, light and tasty!
